| 内容記述 | 本稿は，ジビエとして注目を集める鹿の食肉化に焦点を当て，日本社会での鹿肉の普及・定着に向けた問題とその改善方法を多面的・総体的に考察することを目的とする。本稿1では鹿肉が日本でどのように受容され認識されたかを概観する。本稿2では日本社会で鹿肉の普及が抑制されてきた背景について，大量調達，大量生産，大量販売・大量消費の3つの観点から解明する。本稿3では本稿2を踏まえ，将来的な鹿肉の大量調達・大量生産・大量消費の実現方法を提案する。最後に本稿1～3の考察を踏まえ，鹿肉を活用した地域振興の可能性に言及する。 | |||||

| 内容記述 | In a previously published paper, we confirmed the actual damage to agriculture, forestry and fisheries caused by wild birds and beasts（especially deer）in various parts of Japan, the process of deer becoming harmful birds and beasts, deer breeding factors and various problems caused by them, and we considered measures for managing the number of animals. The article is a sequel to the previous discussion. In this paper, we focus on venison, which is attracting attention as one of the methods for managing the number of deer and is also attracting attention as a gibier dish. And the purpose of this study is to consider the problems for the spread and establishment of venison in Japanese society and how to improve them in a multifaced and comprehensive manner. |
