However, with the drastic decline of the traditional Toji-centered system since the postwar economic high-growth period, sake breweries have started to seek out alternative systems, out of necessity. Recently, the number of so-called Kuramoto-Toji-owners who brew their own sake by their hands, in companies mostly of a small size-have been increasing and attracting considerable attention in the sake-brewing industry.
